Strawberry Freeze

Alright, so these aren’t cupcakes BUT they do happen to be an awesome treat while mother nature decides to cook us in her environmental oven. All you need are strawberries, powdered sugar, and a freezer!

Take the strawberries and rinse them off in the sink. Dip the strawberries in powdered sugar. I used a shot glass to dip the strawberries in the powdered sugar. Although it proved difficult to put sugar on the fat strawberries…

Then place them on cupcake liners or wax paper. Place them in the freezer for about 15-20 minutes so that they are a little frozen but not hard as a rock when you bite into it.

And there you have it, a little frozen treat without having to chase the ice cream man.

DUDE, Crazy Ivan

This past weekend was Lebowski fest in Milwaukee, where friends got together to bowl, drink White Russians and watch the cult flick The Big Lebowski. In the film, the Dude only drinks white russians, so in honor of the occasion I remixed the good old cocktail.

Original Recipe

2 oz. vodka

1 oz.  kahlua

fill with cream over ice

(low ball glass)

Since cream drinks can get old (and some of us are lactose intolerant) I decided to try a little variety like this…

To create the Crazy Ivan

Crazy Ivan

1.5 oz whipped cream vodka

1 Kahlua

fill with vanilla almond milk over ice

dust with cinnamon

This was a great drink that could be made for a morning drink, or say a winter dessert drink. Go ahead and be crazy though. Try the chocolate almond milk instead. Try the cake vodka with regular almond milk or coconut milk. Forget the cinnamon and try nutmeg. The possibilities are endless!

But in all serious try the Crazy Ivan. You won’t regret it I promise!

Father’s Day Mint Madness

This Father’s day, my dad and I celebrated with a nice summer dinner and mint. We made a classic cocktail- The Mojito- with fresh mint from the garden and limes. Oh my gosh, so many limes…

the Mojito

6 fresh mint leaves

6 limes

a tablespoon of super fine sugar

seltzer water

1 oz shot of rum

(mojito glasses)

Cut some limes in half and use a juicer to get the lime juice. We added more limes than needed, but you can use a minimum of 6 limes if you’d like. If you want more mint taste, put a mint leaf on the juicer while juicing some limes. Mix the sugar, rum, lime juice, mint, and ice in a shaker. Shake until you think it’s mixed enough.

In a mojito glass (or any glass really) add mint and ice. Pour the mixture over the mint and ice.

Top off with seltzer water and add a straw for further enjoyment.

Tropical Shortage

These shorts rock. Come on, a part of you REALLY wants to smile when you see them. I found these delightful shorts at a thrift store with my sister back in the day. Despite my sister hinting I resemble a tourist on a tropical vacation, I believe these are perfect with a boyfriend button down on a friday night.

Strawberry short(cup)cake

Mmmmm strawberry shortcake is one of those foods that has summer written all over it. In Keenest style, we converted it into a cupcake.

Ingredients:

2/3 cup oil

2 eggs

3/4 sugar

1/2 vanilla extract

2 cups flour

3/4 tsp baking soda

1 (or more) cups strawberries

powdered sugar

—- mix the oil, eggs, sugar, flour, vanilla extract and baking soda in a bowl. The batter should be firm when fully mixed. Put the cup liners in the muffin tin and then grab a small ball of batter. To make the bottom layer of each cupcake, use a roller to evenly roll out the batter and trim off any batter that does not fit in the bottom. You can also flatten the small ball of batter in your hand like I did. Place the layer on the bottom of the liner then add the strawberries on top of the bottom layer. Add as many strawberries to the middle layer as you like!

Add the rest of the batter on top of the strawberries to complete the cupcake. Bake at 350 degrees for 20-30 minutes. When cooled, add powdered sugar for a little sweetness.

Also, make sure to check out King Arthur Flour when trying this or any recipe out. It is an unbleached all purpose white flour that doesn’t have the added chemicals in the flour making process. It is in most grocery stores in the organic foods aisle.
