Marshmallow Topped Cupcakes

So many marshmallows so little time. This was a very sweet cupcake but worth it for fun in the summer. I would suggest adding graham crackers and melted chocolate on the top for s’more-esc cupcakes.

Ingredients

2 1/2 white flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon baking soda

2 eggs

1 cup sugar

1/2 cup olive oil

1/2 cup cream cheese

beat eggs and sugar together until fluffy. Sift in flour, baking powder, salt and baking soda. Add cream cheese and mix until smooth.

Fill cupcake liners two thirds of the way. Bake at 325 degrees for 20 minutes or until springy to the touch.

Frosting Ingredients

1/2 cup butter at room temperature

1 tablespoon vanilla extract

1 cup powdered sugar

Beat frosting ingredients until smooth. Add a dollop to cooled cupcakes. Add marshmallows by starting in the middle and working your way down.

Purple Haze

I found this dress at Value Village ages ago. In order to make it more twenty something and less old lady dress – I paired it with a synch belt from Forever 21. I recently found these Harley boots at one of my favorite shops and I couldn’t be more thrilled to wear them to my new internship this Fall.

Stone Sour

A friend of mine asked me to make him a drink using Disaronno liqueur. This frozen drink was a bit of an inspiration from a drink my dad had tried when he was in his twenties.

Stone Sour

1 1/2 cups Brandy

1 1/12 cups Disaronno

1 lemonade concentrate

1 orange juice concentrate

2 cups green tea

lemon for garnish

Boil two cups of water and let green tea bags seem for 5 minutes. In a shallow pan, add the green tea, brandy, Disaronno, lemonade and orange juice. Put in freezer overnight and chop out pieces into a pony class. Add Lemon for garnish.

Sticky Sweet Cheerio Clusters

mmmmm so tasty. These are really simple to make, and only take 30 minutes!

Honey Nut Cheerio Clusters

3 tablespoons butter

4 cups mini marshmallows

6 cups honey nut cheerios

(peanut butter optional)

Place the butter and marshmallows on the stove until melted. Shut off stove and add the cheerios, stirring constantly so that every single cheerio has a sticky coating. Add peanut butter if you want a peanut butter cluster. I cut individual wax paper squares and stuck them on the bottom of each cup so that I could make the clusters.

If you want them more decorative, add coconut sprinkles or chocolate syrup drizzled on top. The clusters were perfect for a little snack attack when desperately needed after work.

Hop on the Bandwagon: Coconut Basil Gimlet

This week I looked up recipes for cocktails rather than playing around with my ingredients on my one. I found this one on refinery29.com which was featured for their Memorial Day cocktail round up.

I know the idea of basil in your drink sounds like drinking in pizza but it adds a nice kick at the end to a sweet and citrus like taste. 

Give it a try.. It won’t kill ya.

Fourth of July, Oh My!

Ahh the Fourth of July. Let us celebrate America by drinking beer, watching fireworks and eating foods with the color scheme red, white and blue. Here are my ‘Merica style cupcakes for you to admire.

Blueberry cupcakes with buttermilk frosting

3 cups white flour

1 tablespoon baking powder

1/4 teaspoon salt

1/4 teaspoon baking soda

1/2 cup butter

1 cup sugar

4 eggs

1 1/2 cup blueberries

Mix the flour, baking powder, salt and baking soda in a bowl. Next, add the butter, sugar and eggs until smoothly mixed. Then add blueberries.

Fill the cupcake liners about 2/3 of the way with batter and bake at 325 degrees for 20-25 minutes.

When the cupcakes have cooled off, add a dollop of frosting.

Buttercream frosting

1/2 cup butter

2 tablespoons milk

1 tablespoon vanilla extract

3 cups powdered sugar

In mixer, beat the butter and gradually add the milk vanilla and powdered sugar. mix until smooth.

rinse blueberries and raspberries and add to the tops of the cupcakes. Arrange the cupcakes like an American flag!
