So many marshmallows so little time. This was a very sweet cupcake but worth it for fun in the summer. I would suggest adding graham crackers and melted chocolate on the top for s’more-esc cupcakes.
2 1/2 white flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1 cup sugar
1/2 cup olive oil
1/2 cup cream cheese
beat eggs and sugar together until fluffy. Sift in flour, baking powder, salt and baking soda. Add cream cheese and mix until smooth.
Fill cupcake liners two thirds of the way. Bake at 325 degrees for 20 minutes or until springy to the touch.
1/2 cup butter at room temperature
1 tablespoon vanilla extract
1 cup powdered sugar
Beat frosting ingredients until smooth. Add a dollop to cooled cupcakes. Add marshmallows by starting in the middle and working your way down.
