Food Friday: Ittie Bittie Stir Fry


Earlier this week I made a mini stir fry for my mom. I mean mini because it has so few ingredients and it surely cannot feed a thousand. It was a fun choice when the main meat eater of the house (Dad) is out and the lone vegetarian (me) must feed the hungry (mom).

The Wee Lil’ Stir Fry

1 cup sugar snap peas

1 cup snow peas

1 carton of extra firm tofu

1 marinade of your choice

crunchy noodles

Cut  tofu in small cubes and place in a bowl. Pour marinade over tofu and let sit for five minutes to absorb the marinade. After five minutes, add tofu and peapods in a frying pan and fry until heated. Sprinkle crunchy noodles on top and serve!
