Baked Ricotta

Do you remember that time when you made lasagna, or stuffed pasta shells? You went to the grocery store, picked out the exact amount of pasta noodles, sauce, and tomatoes. Then you get to the dairy aisle and decide between the pint size or liter size container of ricotta cheese. The pint size won’t be enough, but the liter size container is too much for the meal. But what will you do with all that leftover cheese? Make another lasagna? No way! No one could possible eat that much lasagna!  So you pick the larger ricotta, and resign to the fact that you’ll be throwing away a lotta ricotta (ha ha) later…

Lucky for you, I happened to stumble upon this Baked Ricotta recipe right after my own dilemma of leftover ricotta. It can be a great appetizer for a party, or to switch up the plain cream cheese on toast.

Give it a try! What have you got to lose?


2 Cups ricotta cheese 
1 clove garlic 
1 sprig rosemary, finely chopped 
1 lemon, zest only 
3 Tablespoons olive oil (plus a bit for finishing) 
1 pinch red pepper flakes 
1 pinch salt and pepper 
1 baguette, sliced and toasted 
(Butter, for baking dish)

Add the ricotta in a large bowl and mix the spices together. When evenly mixed, bake for 15-20 minutes at 375 degrees. Serve with baked french bread or toast and you’re ready!

This past year I traveled a lot to New York City or Minneapolis. What I clearly forgot during some of these trips was how cold the airport can be, and how much I would love to take a nap while I sit on this thing. Not only was the film interesting with its characters and their actions, but it made the audience think about this futuristic world. I was impressed with how Cronenberg portrayed the novel by Don Delillo, as well as Robert Pattinson’s performance.

vanityvanityvanityI agonized my make-up & jewelry drawer every time I looked at it. How could it be so cluttered? How did it get like this? How can I fix it? I found these pictures as inspiration for finally organizing my own vanity this past summer.

peking duckYes I am a vegetarian but this peking duck found in Flushings, NY was so tasty. It was quite the adventure to find it, since it is only a window you walk up to and pay $1 for a little bit of heaven. (So sorry little ducks but you are just so tasty…)


Eat like a King: Salmon stuffed with spinach and cheese

My mom went to the grocery store, and made a fine creation: Salmon stuffed with spinach and cheese. I found a similar recipe at Whole Foods, but I think if you want to explore spices or add different cheeses, than I say DO IT!


Pre-cook the salmon, but just enough so that it is no longer raw. You’re going to stick it in the oven later on…


Mix the ricotta cheese and cooked spinach in a bowl. When the Salmon is cooled, add the spinach mixture and roll the salmon long ways. Stick in the oven at 400 degrees for 20 minutes.

Birthday dinner means birthday coma

My birthday was only yesterday and I feel like I celebrated ages ago! I had a fantastic birthday and it is distinguished by all the sea food I ate in one weekend. On Friday I ate tapas with my parents, aunt and cousin. The best tapas were the scallops in a four cheese sauce, a duck Pâte with ginger jam and mussels! Then on the actual day, my mom made a lobster parma rosa sauce with fresh thyme and lobster! Pealed from the shell swimming in the sauce over spinach, butternut squash, and four cheese ravioli. I could have died happy in a food coma.







Food Friday: Ittie Bittie Stir Fry


Earlier this week I made a mini stir fry for my mom. I mean mini because it has so few ingredients and it surely cannot feed a thousand. It was a fun choice when the main meat eater of the house (Dad) is out and the lone vegetarian (me) must feed the hungry (mom).

The Wee Lil’ Stir Fry

1 cup sugar snap peas

1 cup snow peas

1 carton of extra firm tofu

1 marinade of your choice

crunchy noodles

Cut  tofu in small cubes and place in a bowl. Pour marinade over tofu and let sit for five minutes to absorb the marinade. After five minutes, add tofu and peapods in a frying pan and fry until heated. Sprinkle crunchy noodles on top and serve!
